Philippine Liberica, commonly known as, “Barako,” is a species of coffee that grows in only a handful of the coffee-growing countries. Liberica trees have larger leaves, larger cherries and big beans that puff up during roasting. Barako is traditionally roasted dark, producing a very bitter and bold brew. Its size and flavor earned it its nickname.
